If you don’t have an oven safe pan, a baking tray will work just fine. Feel free to add other ingredients like pudding, peppers or tomatoes too.

- 1 Oven safe pan
- 1 Knife
Ingredients
- 150 g Potatoes
- 30 g Chorizo
- 1 Onion (small)
- 1 Egg
- 1 tsp Seasonings (salt, pepper, garlic powder)
- 1 tbsp Parsley

Instructions
- Preheat the oven to 200 degrees.
- Cut the potatoes into cubes and dice the chorizo and onion.
- Par boil the potatoes, just until they are soft.
- While the potatoes are boiling, fry the chorizo and onion on the pan for a few minutes.
- Once soft, strain the potatoes and season with salt, pepper, and garlic powder.
- Add the potatoes to the pan and toss all the ingredients well together.
- Let them fry for another couple of minutes until crispy.
- Make a well in the centre of the pan and crack the egg into the well.
- Put the oven safe pan in the preheated oven for 5-7 minutes.
- Remove from the oven, top with some fresh parsley and enjoy!
