If you don’t have an oven safe pan, a baking tray will work just fine. Feel free to add other ingredients like pudding, peppers or tomatoes too.

Equipment

  • 1 Pot
  • 1 Oven safe pan
  • 1 Knife

Ingredients

  • 150 g Potatoes
  • 30 g Chorizo
  • 1 Onion (small)
  • 1 Egg
  • 1 tsp Seasonings (salt, pepper, garlic powder)
  • 1 tbsp Parsley

Instructions

  • Preheat the oven to 200 degrees.
  • Cut the potatoes into cubes and dice the chorizo and onion.
  • Par boil the potatoes, just until they are soft.
  • While the potatoes are boiling, fry the chorizo and onion on the pan for a few minutes.
  • Once soft, strain the potatoes and season with salt, pepper, and garlic powder.
  • Add the potatoes to the pan and toss all the ingredients well together.
  • Let them fry for another couple of minutes until crispy.
  • Make a well in the centre of the pan and crack the egg into the well.
  • Put the oven safe pan in the preheated oven for 5-7 minutes.
  • Remove from the oven, top with some fresh parsley and enjoy!
