Ingredients
150gPotatoes
30gChorizo
1 Onion(small)
1Egg
1tspSeasonings(salt, pepper, garlic powder)

Instructions
Preheat the oven to 200 degrees.
Cut the potatoes into cubes and dice the chorizo and onion.
Par boil the potatoes, just until they are soft.
While the potatoes are boiling, fry the chorizo and onion on the pan for a few minutes.
Once soft, strain the potatoes and season with salt, pepper, and garlic powder.
Add the potatoes to the pan and toss all the ingredients well together.
Let them fry for another couple of minutes until crispy.
Make a well in the centre of the pan and crack the egg into the well.
Put the oven safe pan in the preheated oven for 5-7 minutes.
Remove from the oven, top with some fresh parsley and enjoy!
