Ingredients
- 10 Strawberries (de-hulled and chopped)
- ½ Pomegranate seeds
- 2 Handfuls of mixed salad leaves
- ½ tbsp Balsamic vinegar
- 1 tbsp Extra virgin olive oil
- Salt and pepper
- 1 tsp Pine nuts
Instructions
- Toast the pine nuts on a hot pan for about 3 minutes until they begin to turn brown.
- Place leaves in a serving bowl with strawberries and pomegranate seeds on top.
- Drizzle over balsamic and olive oil, and add a pinch of salt and pepper.
- Toss well and top with pine nuts to serve.
