For Intensive Exercise
Performance Benefits
Potatoes are a starchy vegetable, so they are high in carbohydrates. This makes them suitable for both recovery and preparation for intense exercise. The high carbohydrate content of potatoes makes them particularly good for carbohydrate loading for exercise competition.
Health Benefits
The phosphorous, calcium, magnesium and zinc in potatoes all help the body to build and maintain bone structure and strength.

If you are making a large amount of these wedges place your chopped potatoes in cold water while you finish chopping the rest, this will prevent them going brown.
