Mini Protein Carrot Cakes

Equipment
- Blender
- Greaseproof paper
Ingredients
- 100 g Oat flour (blitz oats in a food processor)
- 4 Scoops whey protein powder
- 2 tsp Cinnamon
- 4 Egg whites
- 4 Large carrots
- 60 g Natural yoghurt
- 90 g Honey
- 180 ml Water
- 1 tbsp Vanilla extract
Instructions
- Preheat the oven to 190°C.
- Puree the carrots in a blender, before adding the remainder of the wet ingredients.
- Mix the dry ingredients in a separate bowl, before pouring in the wet mixture and mixing well to form a batter.
- Pour the mix into a baking tray lined with baking paper and bake for 30 minutes.
- Allow cooling before cutting into squares (e.g. 8 cakes).
