10-minute Cream Cheese Pasta

Summer can be a busy time, so this quick and simple recipe is perfect for those evenings when you are stuck for time. This creamy pasta goes great with the saltiness from the bacon and flavours of the tomatoes and spinach.

- 1 Pan
- 1 Colander
Ingredients
- 100 g Fresh tagliatelle pasta
- 2 tbsp Low-fat cream cheese (e.g. Philadelphia)
- 1 tbsp Milk
- 100 g Bacon lardons
- 90 g Cherry tomatoes
- 1/2 cup Spinach

Instructions
- Chop the cherry tomatoes into halves.
- Bring a pot of water to the boil for the pasta.
- Once boiling, add the pasta to the pot of water for 3-4 minutes.
- Add the bacon bits to a pan and cook over a medium to high heat for about 2 minutes, before lowering the temperature and adding in the cherry tomatoes.
- Allow these to simmer, stirring occasionally.
- When these are cooked, add the cream cheese to the pan and let it melt. Add as much milk as required to form a saucy consistency.
- When the pasta is cooked, drain the water using the colander and place the pasta back into the pot.
- Add all the ingredients from the pan, along with the spinach, to the pot of pasta and mix thoroughly.
- Serve with a sprinkle of pepper and enjoy!
