- Wire rack
- Large Bowl
- Toothpick
- Greaseproof paper
Ingredients
- 2 Sweet potato
- 2 Carrot
- 120 g Oats
- 4 tbsp Walnuts
- 4 tbsp Chia seeds
- 2 tbsp Sesame seeds
- 100 ml Milk
- 2 tsp Baking Soda
- 1 tsp Cinnamon
- 1 Free-range egg
- 1 tsp Vanilla extract
Instructions
- Peel and chop the sweet potatoes and carrots, steam for 20 minutes until soft.
- In the meantime pre-heat oven to 190°C.
- Mix the dry ingredients (oats, walnuts, milled chia seeds, sesame seeds, baking powder, and cinnamon) in a large bowl.
- In a separate bowl, mash the sweet potato, carrots, egg, milk and vanilla essence until smooth (or mix in a blender).
- Mix the dry and wet mixtures well to form a dough.
- Pour the dough into a baking tin lined with greaseproof paper, and bake for 50 minutes.
- Remove from the oven, when a toothpick inserted in the bread comes out clean.
- Allow time to cool briefly on a wire rack before slicing and serving.
