Ingredients
2Sweet potato
2Carrot
120gOats
4tbspWalnuts

Instructions
Peel and chop the sweet potatoes and carrots, steam for 20 minutes until soft.
In the meantime pre-heat oven to 190°C.
Mix the dry ingredients (oats, walnuts, milled chia seeds, sesame seeds, baking powder, and cinnamon) in a large bowl.
In a separate bowl, mash the sweet potato, carrots, egg, milk and vanilla essence until smooth (or mix in a blender).
Mix the dry and wet mixtures well to form a dough.
Pour the dough into a baking tin lined with greaseproof paper, and bake for 50 minutes.
Remove from the oven, when a toothpick inserted in the bread comes out clean.
Allow time to cool briefly on a wire rack before slicing and serving.
