Ingredients

  • 2 Sweet potato
  • 2 Carrot
  • 120 g Oats
  • 4 tbsp Walnuts
  • 4 tbsp Chia seeds
  • 2 tbsp Sesame seeds
  • 100 ml Milk
  • 2 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1 Free-range egg
  • 1 tsp Vanilla extract

Instructions

  • Peel and chop the sweet potatoes and carrots, steam for 20 minutes until soft.
  • In the meantime pre-heat oven to 190°C.
  • Mix the dry ingredients (oats, walnuts, milled chia seeds, sesame seeds, baking powder, and cinnamon) in a large bowl.
  • In a separate bowl, mash the sweet potato, carrots, egg, milk and vanilla essence until smooth (or mix in a blender).
  • Mix the dry and wet mixtures well to form a dough.
  • Pour the dough into a baking tin lined with greaseproof paper, and bake for 50 minutes.
  • Remove from the oven, when a toothpick inserted in the bread comes out clean.
  • Allow time to cool briefly on a wire rack before slicing and serving.
