Hazelnut Chocolate Bombs

Ingredients
- 200 g Oats
- 2 tbsp Shelled hemp
- 2 scoops Whey protein powder
- 50 g Dark chocolate (chopped)
- 2 tbsp Cacao powder
- 2 tbsp Peanut butter
- 10 Medjool dates
- 1 tbsp Honey
- 100 ml Low-fat Milk
- 80 g Hazelnuts
- 1 tsp Coconut oil
- ½ tsp Salt

Instructions
- Soak the dates in hot water for 15 minutes.
- Blitz the hazelnuts in a food processor for two minutes.
- Place the hazelnuts on a tray with a pinch of salt and roast in a preheated oven for 10 minutes at 180℃. Remove from the oven and set aside to cool when finished.
- Add about a third of the hazelnuts as well as the oats, hemp, protein, cacao powder and a third of the chopped chocolate to a large bowl and mix to combine.
- Drain the dates and add them to a food processor with the peanut butter, money and milk.
- Blitz for 1 minute. Stop and scrape the mixture on the sides down towards the blade. Blitz again, repeat this 2-3 times until smooth.
- Add the date mixture into the bowl with the oats and mix well to fully combine with the dry ingredients.
- Shape the mixture into balls using your hands and place on a flat tray or plate.
- Melt the other half of the dark chocolate with a tsp of coconut oil.
- Spoon a dollop of chocolate over the top of the energy balls and allow to drip down the sides.
- Transfer the chopped hazelnuts into a small bowl.
- Before the chocolate hardens, dip the energy balls with the melted chocolate side down in the hazelnuts to coat.
- Place them back on the tray or plate and leave to set in the fridge for a couple of hours before serving.
