Ingredients

  • 200 g Oats
  • 2 tbsp Shelled hemp
  • 2 scoops Whey protein powder
  • 50 g Dark chocolate (chopped)
  • 2 tbsp Cacao powder
  • 2 tbsp Peanut butter
  • 10 Medjool dates
  • 1 tbsp Honey
  • 100 ml Low-fat Milk
  • 80 g Hazelnuts
  • 1 tsp Coconut oil
  • ½ tsp Salt

Instructions

  • Soak the dates in hot water for 15 minutes.
  • Blitz the hazelnuts in a food processor for two minutes.
  • Place the hazelnuts on a tray with a pinch of salt and roast in a preheated oven for 10 minutes at 180℃. Remove from the oven and set aside to cool when finished.
  • Add about a third of the hazelnuts as well as the oats, hemp, protein, cacao powder and a third of the chopped chocolate to a large bowl and mix to combine.
  • Drain the dates and add them to a food processor with the peanut butter, money and milk.
  • Blitz for 1 minute. Stop and scrape the mixture on the sides down towards the blade. Blitz again, repeat this 2-3 times until smooth.
  • Add the date mixture into the bowl with the oats and mix well to fully combine with the dry ingredients.
  • Shape the mixture into balls using your hands and place on a flat tray or plate.
  • Melt the other half of the dark chocolate with a tsp of coconut oil.
  • Spoon a dollop of chocolate over the top of the energy balls and allow to drip down the sides.
  • Transfer the chopped hazelnuts into a small bowl.
  • Before the chocolate hardens, dip the energy balls with the melted chocolate side down in the hazelnuts to coat.
  • Place them back on the tray or plate and leave to set in the fridge for a couple of hours before serving.
