Ingredients
- 1 Ciabatta
- 2 Eggs
- 60 g Halloumi
- 40 g Rocket Leaves
- 1 tsp Olive Oil
- 1 tsp Salt & Pepper

Instructions
- Cut the halloumi into 1cm thick slices.
- Heat the olive oil on the pan over a medium heat.
- Once heated, fry the halloumi slices for 1 minute each side, then remove from the pan.
- Cut the ciabatta in half & toast it.
- Crack both eggs onto the pan and stir continuously until scrambled.
- Season with salt and pepper.
- Take the toasted ciabatta, and add the halloumi slices, rocket & scrambled eggs on top.
- Sprinkle some paprika over the top (optional).
