Ingredients
1Ciabatta
2Eggs
60gHalloumi
40gRocket Leaves
1tspOlive Oil
1tspSalt & Pepper

Instructions
Cut the halloumi into 1cm thick slices.
Heat the olive oil on the pan over a medium heat.
Once heated, fry the halloumi slices for 1 minute each side, then remove from the pan.
Cut the ciabatta in half & toast it.
Crack both eggs onto the pan and stir continuously until scrambled.
Season with salt and pepper.
Take the toasted ciabatta, and add the halloumi slices, rocket & scrambled eggs on top.
