Ingredients
- 200 g smoked salmon (chopped)
- 120 g uncooked linguine
- 3 handfuls mixed spinach/ rocket
- 1/2 red onion (chopped)
- 12 cherry tomatoes (chopped)
- 60 g feta cheese chopped
- 2 tbsp red pesto
- 1 tbsp balsamic vinegar
Instructions
- Add the linguine to a pot of boiling water and cook as per instructions on the back of the pack
- In a large bowl or pot add the mixed leaves, tomatoes, feta cheese, smoked salmon, and onion.
- Once the linguine is cooked add it to the pot
- Add in the pesto and balsamic vinegar and mix everything.
