Ingredients
- 450 g Chicken Fillets
- 200 g Mixed Leaf Salad
- 2 Carrots (grated)
- 2 Celery Stalks (thinly sliced)
- 60 g Cashews
- 40 g Raisins
Dressing:
- 75 g Light Mayonnaise
- 60 g Greek Yoghurt
- 1 tbsp Lemon Juice
- 1 tsp Honey
- 2 tsp Curry Powder
- 1 tsp Salt & Pepper

Instructions
- Cut the chicken into bite sized pieces.
- In the pan, cook the chicken over a medium heat for 6-8 minutes or until cooked through.
- Add all of the ingredients, including the cooked chicken, to the large mixing bowl.
- To make the dressing, whisk together the mayonnaise, yoghurt, lemon juice, curry powder, honey and seasonings in a small bowl.
- Pour this over the salad ingredients and toss until it is all combined.
