- 1 Pan/Wok
- 1 Roasting tray
Ingredients
- 4 Sweet Potatoes
- 1 lb Lean Mince
- 1 Pepper
- 10 Cherry Tomatoes
- 80 g Grated Cheese
- 2 tbsp Olive Oil
- 4 tbsp Passata
- 4 tbsp Sweet Chilli Sauce
- 2 tbsp Balsamic Vinegar
- 2 tsp Paprika
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Garlic Granules
- 1 tsp Chilli Flakes

Instructions
- Cut the sweet potatoes in half (lengthways).
- Lay them out on the roasting tray and drizzle over the olive oil.
- Roast in the oven at 200 degrees for 25 minutes, or until soft when poked with a fork.
- While the sweet potatoes are roasting, chop the pepper and cherry tomatoes.
- In the pan, cook the mince, peppers and tomatoes over a medium heat for 8-10 minutes or until cooked through.
- Add the passata, sweet chilli sauce, vinegar and seasonings while the mince & veg are cooking.
- Take the sweet potatoes out of the oven once they are baked.
- Load the 2 halves of the potatoes with the mince from the pan.
- Sprinkle the grated cheese over the top and let it melt for a minute, then enjoy!
