Ingredients
- 2 tbsp Extra virgin olive oil
- 1 Onion (finely diced)
- 1 Sweet potato (chopped)
- 2 Potato (chopped)
- 3 Carrot (chopped)
- 2 Red chilli (finely sliced)
- 2 clove Garlic (crushed)
- 3 Bell pepper (chopped)
- 4 tsp Cumin
- 1 tbsp Paprika
- 4 Tomatoes (chopped)
- 400 g Kidney beans
- 200 g Butter beans
- 1 handful Coriander (fresh and chopped)
- 1 Lime (Juice of 1 lime)
- 1 tbsp Honey
- 1 tbsp Balsamic vinegar
Instructions
- Mix the chopped potatoes with balsamic vinegar, salt, cumin and paprika and place in a pre-heated oven, 200°C.
- Sauté the onions and carrots on medium-high heat for 10 minutes before adding chillies, garlic, tomatoes and peppers.
- Add in chopped tomatoes, salt and spices and stir well.
- Simmer for 20 minutes.
- Add in the juice of a lime, butter beans and kidney beans, and simmer for another 5 minutes.
- Add in fresh coriander and honey to taste.
- Next, add in your roasted potatoes and mix well.
- If you like it spicier, add either cayenne pepper or dried chilli flakes.
