Ingredients
- 1 Red bell pepper (deseeded and sliced)
- 1 Green bell pepper (deseeded and sliced)
- 1 Head of broccoli (1 small head, florets separated)
- 1 Carrot (chopped into strips)
- ½ tbsp Extra virgin olive oil
- 1 tsp Salt
For the tzatziki
- 100 g Cottage cheese
- 3 tbsp Greek yoghurt (50g)
- ½ Cucumber (diced)
- ¼ Red onion (chopped)
- 1 clove Garlic (peeled and grated)
- ¼ Lemon (1 tbsp of lemon juice)
- ¼ handful Dill (chopped)
- 1 tsp Ground black
Instructions
- Preheat the oven to 180°C.
- Place the peppers, broccoli and carrot on a baking tray lined with greaseproof paper, drizzle the oil over, sprinkle some salt on top and bake in the oven for 15 minutes.
- Meanwhile make the tzatziki. Put the cottage cheese, yoghurt, cucumber, red onion, garlic, lemon juice and dill in a bowl and mix well.
- Season with black pepper. Serve with the oven-roasted veggies.
