Ingredients
- 1 tbsp Extra virgin olive oil
- ½ tbsp Oregano (dried)
- 1 tsp Salt
- 1 tsp Ground pepper
- 4 Chicken breast
- 4 Tomatoes (chopped)
- 1 Cucumber (chopped)
- 150 g Black olives (pitted)
- 1 Red onion (peeled and finely sliced)
- 200 g Feta cheese
For the dressing
- 2 tbsp Extra virgin olive oil
- ½ tbsp Oregano (dried)
- 1 Lemon (juice from 1 lemon)
- ½ tsp Salt
- ½ tsp Ground pepper
Instructions
- In a large bowl, mix the olive oil with the oregano, salt and pepper. Add the chicken and mix, ensuring it’s well coated with the oil and herb mixture.
- Place the chicken under a preheated grill and cook for 5 minutes each side.
- In a large serving bowl, mix together the tomatoes, cucumber, olives, onion and feta.
- Now make the dressing. Whisk all the ingredients together in a small bowl, then pour over the salad and toss well.
- Divide the salad between four bowls and place the grilled mini fillets on top.
