Steak with Cheesy Roasted Veg

How do you like your steak?This is a great combination of flavours. Smashed and roasted balsamic spuds and brussel sprouts with fried onions and melted gruyere cheese served up with a steak just how you like it! Enjoy!

Ingredients
- 10 Brussel sprouts
- 10 Baby potatoes
- 2 ½ tbsp Olive oil
- 4 tbsp Balsamic vinegar
- 1 tsp Garlic powder
- ½ tsp Ground pepper
- ½ tsp Sea salt
- 2 Onion (sliced)
- 2 Sirloin steaks (approx. 200g each)
- 8 Asparagus

Instructions
- Bring a pot of water to a simmer.
- Wash and trim the brussel sprouts.
- Prick holes in the potatoes using a fork.
- Place the sprouts and potatoes in the pot of simmering water and cook for 20 minutes.
- Meanwhile, preheat the oven to 200℃.
- Mix the balsamic vinegar, 1 ½ tbsp olive oil, garlic, pepper and salt together in a small bowl.
- When the potatoes are cooked, drain the veg and empty them onto a baking tray.
- Flatten each of them using the back of a fork.
- Pour the balsamic mix over the vegetables and mix around the tray well.
- Place the tray in the oven and cook for 15 minutes.
- Heat a tbsp of olive oil on a non-stick pan. Add the sliced onion and fry on a high heat for 3-4 minutes. Add the steaks and asparagus to the pan and cook to preference.
- After 20 minutes, remove the tray from the oven. Add some of the onions to the tray and the grated cheese. Place back in the oven for a further 10 minutes.
- Remove the tray from the oven and serve with the steak and asparagus.
