- 1 Food Processor/Blender
- 1 Knife
- 2 Serving Bowls
Ingredients
- 50 g Chia Seeds
- 200 ml Coconut Milk
- 1 Peach (sliced)
- 2 tbsp Goji Berries
For the puree:
- 100 g Raspberries
- 1 tsp Lemon Juice
- 1 tbsp Maple Syrup

Instructions
- Divide the chia seeds and coconut milk between 2 serving bowls & stir.
- Leave them to soak for 5 minutes, stirring occasionally until the seeds swell.
- While the seeds are soaking, combine the raspberries, maple syrup and lemon juice in a food processor or with a hand blender.
- Add a spoonful of the puree to each bowl & stir.
- Slice the peach and place the slices on top of the puddings.
- Sprinkle the goji berries on top & enjoy!
