Peter's Quesadilla

Peter has brought all his creative skills to this delicious dish! Peter's Quesadilla is a Mexican inspired recipe which combines a toasted tortilla wrap with melted cheese layered over scrambled eggs and vegetables.

If cooking for 1 person, adjust the ingredients to scale, you can fold 1 wrap in the pan to save you turning it over.
Equipment
- Frying pan
Ingredients
- 1 tbsp Extra virgin olive oil
- 1 Red bell pepper (small)
- 1 Red onion (small)
- 30 g Sweetcorn
- 3 Free-range egg
- 2 Tortilla wrap
- 150 g Grated mozzarella (or other cheese)
- ½ Lime (juice)
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Cumin
- ½ tbsp Paprika
Optional
- 30 g Cottage cheese
- 1 handful Coriander
- 1 tsp Garlic powder
Instructions
- Dice and fry the pepper, onion and sweetcorn in olive oil. Season to taste with salt, pepper, cumin, paprika.
- Remove from the frying pan and scramble 3 eggs. Add the veg back into the pan and mix well.
- Remove from the frying pan, and add some olive oil to the pan. Place 1 wrap on the pan and soak up the oil and flavour.
- Turnover, then add a layer of grated cheese.
- Layer on the egg and veggie mix, then add another layer of cheese.
- Place the second wrap on top and cover the pan with a lid for 2 minutes.
- Place a chopping board on top of the pan, turn quickly and then slide the quesadilla back into the frying pan with some olive oil to cook the other side. Place the lid on again for 2 minutes.
- Serve on a chopping board and season to taste with olive oil, salt, pepper and a squeeze of lime juice.
Optional
- Mix 3 tbsp cottage cheese with some garlic, ½ lime juice and salt and pepper.
