Equipment
- Medium-sized casserole dish that has a lid.
- Large non-stick pan
Ingredients
- 1 Large pork fillet (fat cut off)
- 2 tbsp Olive oil
- 1 tbsp Soy sauce
- 1 Medium onion (peeled and chopped)
- 2 cloves Garlic (peeled and crushed)
- 1 pinch Sea salt and freshly ground black pepper
- 1 Red pepper (deseeded and chopped)
- 1 Cooking apple (chopped into chunks)
- 1 tbsp Honey
- 2 tbsp Fresh rosemary (chopped)
Instructions
- Preheat oven to 190°C. Butter a medium-sized casserole dish that has a lid.
- Chop the pork into medallions, roughly bite size. (If you prefer, you can cook the fillet whole and chop when cooked; either method works.)
- Heat the oil in a large, non-stick pan and sauté the pork over a medium to high heat with the soy sauce, onion, garlic, salt and pepper till lightly brown on both sides, then add the chopped red pepper and cook for 10 minutes.
- In a bowl, mix the chunks of apple with the honey until nicely coated.
- Transfer the pork and vegetables from the pan to your dish and stir in the honey apples.
- Put the lid on the dish and transfer to the oven for 20 minutes, spooning the juices over the pork after 10 minutes to add flavour and moisture to the meat.
- Garnish with fresh rosemary and serve with roast vegetables and mashed potato.
