Equipment
- Oven
- Baking tray
- Tin foil
- Bowl x2
Ingredients
- 1 Sweet potato (large)
- 200 g Chicken Breast
For the Chicken
- 1 tsp Cumin
- 1 tsp Smoked paprika
- 1 tsp Coriander
- ½ tsp Oregano
- ½ tsp Garlic powder
- ½ tsp Sea salt
Toppings
- ½ Red onion (sliced)
- 4 Cherry tomatoes (chopped)
- 1 cup Wild leaf salad
- 1 tbsp Balsamic vinegar
- ½ tsp Olive oil
- ½ tsp Sea salt
- 2 Wholemeal burger bun
- 2 tbsp Greek Yoghurt
- 2 tbsp Ketchup
- ½ tsp Hot sauce

Instructions
- Preheat the oven to 180℃.
- Mix the herbs and spices together in a bowl, dip the chicken breasts in the bowl to coat them.
- Chop up the sweet potato into wedges.
- Wrap the chicken breasts and sweet potato in tin foil separately. Place both on a baking tray and bake for 30 minutes.
- Toss the salad leaves in a bowl and drizzle the balsamic vinegar and olive oil on top. Add a pinch of sea salt and mix thoroughly.
- Remove the chicken and sweet potatoes from the oven when cooked.
- Lightly toast the burger buns.
- For the sauce, mix the greek yoghurt, ketchup and hot sauce together in a small bowl.
- To assemble the burger, layer the sauce, chicken breast, salad, onions, tomatoes between the burger bun.
- Serve with the remainder of the salad and sweet potato wedges.
