These Berry Bars are the perfect rest day snack to have made in preparation to have with your mid-day cup of tea or coffee. With there easy and minimal preparation you will find yourself making these delicious bars again and again!

Blueberries are packed with antioxidants, which help combat oxidative stress and inflammation in the body. Raspberries are an excellent source of fiber, both soluble and insoluble, therefore aiding the maintenance of a healthy digestive system.
Expert Tips
Serve with Greek yogurt topped with fresh fruit to increase the protein and in turn make it more filling.
Equipment
- Large Bowl
- Mixing Spoon
- Blender
- Lined baking tray
Ingredients
- 180g Oats
- 1 Banana
- 1tbs Honey
- 30ml Low Fat Milk
- 2 Eggs
- 1tsp Vanilla Extract
- 160g Blueberries
- 106g Raspberries
- 50g Mixed Seeds

Instructions
- Preheat the oven to 180 degrees.2. Add the oats to the bowl.3. Using the blender combine the eggs, honey, milk and banana.4. Pour the mixture from the blender into the bowl.5. Mix well and add in the vanilla extract.6. Once all the ingredients are well mixed add in the blueberries, raspberries and mixed seeds.7. Pour into the lined baking sheet and cook in the oven for 15-20 minutes at 180 degrees.8. Melt the dark chocolate and drizzle on top once removed from the oven. 8. Enjoy!
