Equipment
- Non-stick pan
- Medium sized pot
- Large Bowl
- Small bowl
Ingredients
- 120 g Pasta
- 1 tbsp Olive oil
- 150 Bacon medallion steak
- ½ Romaine lettuce heart
- 50 g Wild leaf salad
- 6 Cherry tomatoes
- ¼ Red onion
- 60 g Parmesan cheese (grated)
Salad dressing:
- 1 tbsp Olive oil
- 1 tbsp Lemon juice
- 2 tbsp Greek yoghurt
- 2 tsp Whole grain dijon mustard
- ¼ tsp Salt
- ¼ tsp Black pepper
- ¼ tbsp Garlic powder (optional)
Servings
Instructions
- Bring a pot of water to the boil. Add the pasta and cook for 10-12 minutes or as per packet instructions.
- When the pasta is cooked, strain it and leave it to the side.
- Preheat some olive oil on a pan. Cook the bacon medallion on a medium heat for 5 minutes on each side.
- Remove from the pan when cooked through and chop up into bite size pieces. Leave to cool.
- In a small bowl, combine the olive oil, lemon juice, yoghurt, mustard, salt and pepper and garlic if using. Mix well.
- Chop up the cherry tomatoes and red onion.
- In a large bowl, toss all of the ingredients together and mix well to full coat in the dressing before serving.
