Artichoke and Sun-dried Tomato Fusilli

Equipment
- Non-stick pan
- Medium sized pot
- Small bowl
- Cheese grater
Ingredients
- 100 g Pasta
- 1 tbsp Olive oil
- 8 Chestnut mushrooms (chopped)
- 4 Bacon medallions (chopped)
- 1 Red onion (chopped)
- 1 clove Garlic (minced)
- 100 g Peas
- ½ tsp Smoked paprika
- ½ tsp Oregano
- 50 g Artichoke (in oil)
- 4 Sun Dried tomatoes
- 1 tbsp Greek yoghurt
- 1 tbsp Tomato puree
- 60 g Cheddar cheese
- ½ tsp Black pepper
Servings
Instructions
- Bring a pot of water to the boil.
- Heat the oil on a large non-stick pan.
- Fry the onions and garlic on a medium heat for 5 minutes.
- Add the mushrooms, bacon medallions, smoked paprika and oregano. Fry for 5 minutes.
- Cook the pasta in the pot of simmering water for 10-12 minutes (or as per packet instructions).
- Add the artichoke, sun dried tomatoes and peas to the pan. Cook on a medium heat for a further 5 minutes.
- Drain the pasta and add it to the pan.
- For the sauce, combine the yoghurt, tomato puree, grated cheddar cheese and black pepper in a small bowl.
- Add the cheese sauce to the pan and mix thoroughly to fully coat the pasta in the sauce and allow the cheese to melt fully before serving.
