Steak with Sweet Potato and Parsnip Chips

- Oven
- Baking tray
- Non-stick oven-proof griddle pan
Ingredients
- 1 Sirloin steak (ribeye or fillet)
- 2 Parsnip (peeled and cut into thin strips)
- 2 Sweet potato (cut into thin strips)
- 1 tbsp Extra virgin olive oil
- ½ tsp Cumin (ground)
- ½ tsp Salt
- 2 clove Garlic (peeled and crushed)
- 1 handful Thyme leaves
Instructions
- Remove the steak from the fridge, unwrap from its packaging and allow it to come to room temperature, about 20 minutes.
- Preheat your oven to 200°C.
- In a bowl toss the parsnip and sweet potato pieces together with some olive oil, cumin and salt.
- Spread in a single layer on a baking tray and bake for 15 to 30 minutes (depending on the size of the strips) or until golden brown, flipping halfway through.
- Meanwhile, prepare your steak. Brush each side with a little olive oil, rub in the fresh garlic and season with some salt. Put the steak in a hot non-stick oven-proof griddle pan and cook for about 2 minutes on each side.
- Transfer to the oven for 4 to 5 minutes.
- When the steak is cooked to your liking, remove from the oven, put on a warmed plate and allow to rest for about 4 minutes.
- Remove your veg chips from the oven and sprinkle generously with the thyme leaves, and extra salt and pepper to taste. Serve with the steak.
