Ingredients
- 1 tbsp Olive Oil
- 2 Potatoes
- 4 Eggs
- 1 Onion
- 2 Scallions
- 1 Red Pepper
- 10 Cherry Tomatoes
- 3 tsp Cajun Spice Seasoning
- 1 tsp Seasonings (salt, pepper, mixed herbs, paprika)
- 1 cllove Garlic (minced)
- 50 g Cheese (grated)

Instructions
- Finely chop the potatoes and dice the onion, scallions and pepper.
- Fry the onion, scallions, and potatoes with oil, salt, pepper and garlic on the pan for a few minutes.
- Add Cajun spice and mixed herbs, then add in the chopped pepper and tomatoes.
- Once the potatoes are cooked, crack the eggs into the pan.
- Cook for a few minutes, then remove from the heat.
- Add the grated cheese on top and place under the grill to finish cooking the eggs to your liking.
