Equipment

Ingredients
- 4 Potatoes (approx. 550g)
- 500 g Lean beef mince
- 30 g Chorizo (diced)
- 1 clove Garlic (crushed)
- 1 Onion (chopped)
- Salt
- Black pepper
- 1 tbsp Barbecue sauce
- 2 tbsp Maple syrup (or honey)
- ½ tsp Chilli powder
- ½ tbsp Paprika powder
- 2 tbsp Tomato puree
- 2 tbsp Extra virgin olive oil
- 8 Mushrooms
- 1 Bell pepper
- 1 Tin of tomatoes (chopped)
- 1 tsp Mixed herbs
- 80 g Cheddar cheese (grated)

Instructions
Homemade Chips
- Preheat the oven to 180°C.
- Slice up the potatoes.
- Bring a pot of water to the boil and parboil the potatoes for 8-10 minutes until slightly soft.
- Line a baking tray with some parchment paper, spread the potatoes out on the paper.
- Sprinkle over some sea salt and a drizzle of olive oil.
- Bake for 15-20 minutes until golden brown.
Meatballs
- Preheat the oven to 180°C.
- Fry the chorizo, onion and garlic on a medium heat for 5 minutes.
- Empty the contents of the pan into a large bowl.
- Put some oil on the pan and fry the mushrooms and bell pepper for 10 minutes.
- While the vegetables are cooking, add the minced beef, BBQ sauce, tomato puree, chilli powder, paprika, salt and pepper into the bowl with the fried chorizo mix. Mix well using your hands and then form the mixture into 9 meatballs.
- Next, remove the vegetables from the pan and empty them into a casserole dish and cook in the preheated oven for 10 minutes.
- Fry the meatballs on the pan for 3-4 min on both sides until browned.
- Next place the meatballs in the casserole dish along with the vegetables.
- Mix the tin of tomatoes, maple syrup/honey, mixed herbs and a pinch of salt together in a small bowl,
- Pour the tomato sauce over the meatballs and vegetables.
- Cook in the oven for 20 minutes.
- Remove from the oven, sprinkle over the cheese and place back in the oven for a further 5 minutes until the cheese is golden brown and bubbling.
- Enjoy served with the chips.
