Grilled Chicken Ciabatta

A delicious chicken sandwich with fresh basil pesto and melted mozzarella cheese. Sandwiches are not only a great lunch box filler but fill them up with protein and healthy fats and you have yourself a great mixed meal.

Ingredients
- 1 Ciabatta bread roll
- 1 Chicken breast (small, approx 100g)
- 30 g Green pesto (click here for recipe)
- 30 g Grated mozzarella cheese
- ½ Roast red peppers
- 3 Cherry tomatoes (sliced)
- 1 cup Mixed salad
Serving
Instructions
- Cook the chicken breast under a hot grill for 10-15 minutes.
- If making homemade pesto, follow this recipe.
- Slice the ciabatta bread roll and toast each half until slightly browned.
- Spread 1 serving of pesto between two halves of the ciabatta bread. Top one half with mozzarella cheese.
- Tear up the chicken breast and place on top of one half of the ciabatta roll, followed by the roasted red peppers.
- Place the ciabatta halves under a hot grill for 3-4 minutes, until the cheese is fully melted.
- Remove from the grill, close the ciabatta halves together into a sandwich and serve with mixed salad and cherry tomatoes.
