French Toast with Bacon and Honey

French toast works incredibly well with bacon and honey. It makes for a delicious and satisfying breakfast or lunch.

Equipment

  • Non-stick pan
  • Small bowl
  • Flat tray

Ingredients

  • 1 tbsp Olive oil
  • 2 slice Wholemeal bread
  • 100 ml Milk
  • 2 Eggs
  • 1 tbsp Honey
  • ½ tsp Cinnamon
  • 4 Bacon medallions

Toppings

  • 1 tbsp Honey
  • 20 g Blueberries
  • 2 tbsp Natural yoghurt
2 Servings

Instructions

  • Preheat some oil on a non-stick pan.
  • Whisk the eggs, milk, honey and cinnamon together in a small bowl.
  • Pour the egg mix into a flat tray or narrow bowl.
  • Soak the slices of bread in the egg mix, turning them over to absorb all of the egg.
  • Place the slices of bread on the pan and cook on either side for 3-4 minutes or until lightly browned.
  • Remove the french toast from the pan and put onto plates for serving. Put some more oil on to the pan and fry the bacon medallions as per cooking instructions on packet.
  • Place the medallions with the french toast and top with yoghurt, honey and blueberries to serve.
