Crunchy Chia Quinoa Bars

- Baking parchment

Ingredients
- 100 g Oats (jumbo oats)
- 75 g Quinoa (Cup uncooked pre-rinsed quinoa)
- 2 Banana (mashed or blended)
- 4 tbsp Chia seeds
- 3 tbsp Peanut butter
- ½ tsp Vanilla extract
- 3 tbsp Almonds
- 3 tbsp Pecans
- 3 tbsp Dried mixed fruit
- 2 tbsp Honey
- ¼ tsp Salt
- 1 tsp Cinnamon
Instructions
- Preheat oven to 180°C.
- Line a 13 x 23cm baking tin with baking parchment.
- In a large bowl, mix the oats, quinoa, chia seeds, salt and cinnamon, then stir in the banana and vanilla extract. Next add the almonds, pecans and dried fruit and mix again.
- Place a small saucepan over low heat, add the peanut butter and honey and stir until the mixture is warm and melted into a paste.
- Pour this paste into the oat mixture and mix everything together until well combined.
- Pour into the lined pan and press down firmly with clean hands.
- Bake for 25 minutes or until edges turn golden brown.
- Allow cooling before cutting into bars of the desired size with a sharp knife.
