Ingredients
- 4 Eggs
- 2 large Potatoes approx. 400g, boiled
- 4 Pickles chopped
- 4 tbsp Pickle juice
- 1 Onion chopped
- 1 tsp Wholegrain mustard
- 1 tsp White wine vinegar
- 4 tbsp Greek yoghurt
- ¼ tsp Salt
- ¼ tsp Pepper
- ½ tsp Dill
Servings
Instructions
- Place the eggs in a pot of cold water. Bring the water to the boil.
- Once boiling, start your timer. Cook the eggs for 8-10 minutes.
- Remove from the water and place in a bowl of cold water.
- Leave them to cool before peeling off the shells.
- In a large bowl, roughly chop up the potatoes and eggs.
- Add in the remaining ingredients and mix well until fully combined before serving.
