Ingredients
- 1 tbsp Olive oil
- 500 g Trout
- 6 Potatoes (medium sized)
Lemon Curry Sauce
- 1 clove Garlic (minced)
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
- 1 tbsp Honey
- 1 tsp Curry powder
- 1 tbsp Balsamic vinegar
- 1 tbsp Mustard
- 1 tsp Garam masala
- 1 pinch Salt
Servings
Instructions
- Steam the potatoes for 10-15 minutes (depending on size) until tender.
- Preheat the oven to 180℃.
- To prepare the sauce simply mix all the ingredients together to form a paste.
- Place the whole piece of trout on a lined baking tray.
- Pour the sauce over the trout to fully coat it.
- Place the tomatoes beside the trout and add a pinch of salt and tablespoon of olive oil.
- Place the tray in the oven and cook for 20 minutes at 180℃.
- Remove the trout from the oven and serve with the potatoes.
