Chicken and Bacon Tagliatelle

- Non-stick pan
- Medium sized pot
Ingredients
- 280 g Tagliatelle (uncooked)
- 1 tbsp Olive oil
- 1 Onion (large)
- 2 clove Garlic
- 2 tsp Smoked paprika
- 2 Chicken breasts (large)
- 4 Bacon medallions
- 1 Tin of tomatoes
- 1 tbsp Tomato puree
- 200 g Low-fat cottage cheese
- 1 tbsp Honey
- 1 handful Basil leaves
- 1 pinch Salt
- ¼ tsp Black pepper
Servings
Instructions
- Heat some oil on a pan.
- Sauté the onions on a medium heat until translucent.
- Add the garlic, chilli and smoked paprika and cook on a medium heat for 3 minutes.
- Stir in the diced chicken breast and medallions.
- Fry on a medium heat for 5-10 minutes until the chicken and medallions are cooked through.
- Meanwhile, bring a pot of water to the boil. Cook the tagliatelle for 10-12 minutes or as per packet instructions.
- Add the tomato puree, honey, tin of tomatoes, cottage cheese and basil to the pan.
- Leave to simmer for 10-15 minutes.
- Drain the tagliatelle and add to the pan. Mix well to fully coat the tagliatelle in the sauce.
- Sprinkle over some salt and black pepper before serving.
