Turkey Bolognese Pasta Bake

A hearty pasta bake with minced turkey, chunky vegetables and a melted cheese topping. The turkey makes for a nice change from red meat in the Bolognese mix, you could alternatively use red meat if preferred.

Equipment
- Large skillet
- Medium sized pot
- Casserole dish
- Oven
Ingredients
- 2 tbsp Olive oil
- 2 Red onion (chopped)
- 2 clove Garlic (crushed)
- 1 Red bell pepper (chopped)
- 2 Carrot (cubed)
- 1 tsp Oregano
- 1 tsp Basil
- ½ tsp Chilli powder
- ½ tsp Salt
- ½ tsp Pepper
- 400 g Turkey mince
- 1 ½ tbsp Tomato Puree
- 2 tbsp Worchester sauce
- 1 tbsp Honey
- 1 tin Plum tomatoes
- 1 cube Chicken stock
- 250 ml Water
- 50 g Mozzerella cheese
- 50 g Cheddar cheese
- 200 g Pasta

Instructions
- Heat the olive oil in a large saucepan/frying pan.
- Add the onions and garlic and cook on a high heat for 2-3 minutes.
- Mix in the bell pepper, carrots, herbs and spices, salt and pepper. Cook on a medium heat for 5 minutes.
- Next add the turkey mince, tomato puree, worcester sauce and honey and mix well to fully combine.
- Dissolve the stock cube in 250ml of hot water and add to the dish along with the tin of tomatoes.
- Mix well before slightly covering with a lid and leaving to simmer for 20 minutes.
- Meanwhile, cook the pasta for 10-12 minutes in boiling water. Drain and set aside.
- Preheat the oven to 200℃.
- Add the pasta to the pan with the bolognese mix and mix well.
- Transfer the contents into a baking tray/ casserole dish and sprinkle the cheese on top.
- Place in the oven for 5 minutes to melt the cheese before serving.
