Equipment

Ingredients
- 2 tbsp Medjool dates
- 12 tbsp Cashew nuts (150g, raw unsalted cashews)
- 4 tbsp Desiccated coconut
- 1 Lemon (juice of ½ a lemon and grated rind of 1 lemon)
Instructions
- Remove pits from dates and soak for 1 hour.
- Blend dates to the pulp with a small amount of water.
- Blend cashew nuts into small pieces.
- Place all ingredients in a large bowl and stir until well mixed.
- Using your hands, roll the mix in golf ball-sized portions.
- Roll each ball over a plate covered in desiccated coconut to coat.
- Makes 15 balls.
- Refrigerate for 1 hour and serve.
