2tbspMedjool dates
12tbspCashew nuts(150g, raw unsalted cashews)
4tbspDesiccated coconut
1Lemon(juice of ½ a lemon and grated rind of 1 lemon)

Instructions
Remove pits from dates and soak for 1 hour.
Blend dates to the pulp with a small amount of water.
Blend cashew nuts into small pieces.
Place all ingredients in a large bowl and stir until well mixed.
Using your hands, roll the mix in golf ball-sized portions.
Roll each ball over a plate covered in desiccated coconut to coat.
