Chicken Pesto Pasta Salad

This Chicken Pesto Pasta Salad is the perfect lunch to have prepped and ready to eat for those busy day. It is a great source of protein & carbs and the is an easy way to get micronutients in with the veg!

Ingredients
- 700 g Chicken
- 250 g Cherry Tomatoes
- 25 g Pesto
- 4 Bacon Medallions
- 1 tbs Balsamic Vinegar
- 400 g Pasta (dry)
- 90 g Mascarpone Cheese
- Cajun Seasoning (optional)

Instructions
- Season the chicken with seasoning of your choice (Cajun used here)
- Cook the chicken in the air fryer until cooked through, approximately 45 minutes.
- Grill 4 bacon medallions in the oven.
- While the bacon and chicken in cooking, chop the cherry tomatoes.
- Add the mascarpone cheese, pesto & balsamic vinegar to a small bowl to make the dressing and mix until well combined.
- When the chicken has 15 minutes left start cooking the pasta in a pot of boiling water as per packet instructions.
- When the chicken & bacon is cooked cut into smaller pieces.
- Add the tomatoes, spanich, bacon, chicken & dressing to a bowl and mix until all components are coated in the dressing.
- Serve & enjoy!
