Equipment

Ingredients
- 1 Chicken breast (cooked and sliced)
- 1 handful Baby spinach (washed)
- 1 handful Rocket leaves (washed)
- 1 Apple (cored and sliced)
- 70 g Beetroot (Roasted pickled and sliced)
- 100 g Pickled cucumber
- 1 tbsp Walnuts
- 1 tbsp Peanuts
- 40 g Feta cheese
For the dressing:
- 1 tbsp Extra virgin olive oil
- 10 ml Apple juice
- 1 handful Parsley (chopped)
- 1 handful Mint leaves (chopped)
Instructions
- Place the chicken, spinach, rocket, apple, beetroot, cucumber and nuts in a medium salad bowl and mix gently.
- Put the dressing ingredients in a small bowl and mix well.
- Crumble the feta into the salad, then pour the dressing over. Toss everything together before serving.
