Ingredients
- 1 Salmon fillet
- 1 Onion chopped
- 70 g Rice
- 2 clove Garlic (minced)
- 1 handful Baby spinach
- 1 tsp Cajun spice
- 1 tbsp Extra virgin olive oil
- 4 Cherry tomatoes halved
- 50 g Green beans
- 50 g Peas (frozen)
For the sauce
- 200 g Greek yoghurt
- 2 tbsp Extra virgin olive oil
- ½ clove Garlic (minced)
- ½ handful dill
- ⅛ Cucumber (2 thin slices)
- ½ Lemon (squeeze of a lemon)
For the guacamole
- 1 Avocado
- 1 tbsp Extra virgin olive oil
- ½ Lemon (squeeze of a lemon)
Instructions
- Preheat your oven to 180°C.
- In a medium-sized bowl add the salmon, olive oil and Cajun spice and mix well.
- Place the salmon in the oven and cook for about 15 minutes.
- On a pan, cook the onions, garlic, mushrooms, green beans & peppers with a little olive oil until soft.
- Add the rice in boiling water to cook for 12 min until water evaporates.
- Mix the dill, cucumber, lemon juice, garlic and olive oil with the yoghurt.
- For the guacamole simply mash the avocado with a little olive oil & lemon juice.
- Remove the salmon from the oven, remove the skin and break into pieces with a fork.
- In a medium-sized bowl add the rice to create a bed for the rest of the ingredients. Next add the mixed veg, tomatoes & salmon.
- Top the dish with the guacamole and yoghurt dressing.
