Equipment
- Mixing bowl
- Saucepan
- Rectangular baking tray
- Baking paper
Ingredients
- 6 tbsp Almonds (roughly chopped)
- 3 tbsp Cashew nuts (roughly chopped)
- 4 tbsp Pistachio nuts (shelled and roughly chopped)
- 3 tbsp Raisins
- 15 g Cranberries
- 20 g Mixed seeds
- 20 g Desiccated coconut
- 1 tsp Salt
- 150 g Dark chocolate (75% cocoa solids)
- 2 tbsp Honey
- 1 tbsp Coconut oil
Instructions
- Put the nuts, raisins, dried cranberries, mixed seeds, coconut and salt into a bowl and mix.
- In a small saucepan melt the dark chocolate, honey and coconut oil over low heat.
- Once the chocolate mix is melted pour it over the mixed chopped nuts and raisins.
- Pour the mixture into a small rectangular baking tray lined with baking parchment and spread out evenly.
- Put in the fridge for at least an hour and allow to set. Remove from the fridge, turn out onto a chopping board and cut into squares or bars with a sharp knife. Store in an airtight container for up to a week (if you can keep them that long!).
