Spinach and Ham Omelette

- Non-stick pan
Ingredients
- 4 Free-range egg (beaten)
- 8 Cherry tomatoes
- 1 clove Garlic (chopped)
- 1 Red bell pepper
- ½ Onion
- 1 handful Baby spinach
- 100 g Ham (3 slices of cooked ham)
- 20 g Chorizo (diced)
- 60 g Cheddar cheese (grated)
Instructions
- Chop the tomatoes, pepper, onions and cooked ham.
- Place a non-stick pan on medium heat, add the olive oil, garlic, onions, chorizo and cook for 5 minutes.
- Add in the tomatoes, pepper, cooked ham and spinach, and cook for another 5 minutes.
- Pour the eggs in through the meat and vegetables, and cook until the egg is no longer runny at the sides (3 to 5 minutes).
- Spread cheese on top, slide the pan under a grill on high heat and cook for 5 minutes.
- Note: Beware that the pan’s handle will heat up under the grill, so be sure to use a glove or towel when removing the pan.
