Equipment
- 23cm cast-iron skillet (or non-stick pan)

Ingredients
- 3 tbsp Coconut oil
- 200 g Quinoa (thoroughly rinsed)
- 400 ml Water (very hot)
- ¼ tsp Salt
- 3 Banana (diagonally sliced)
- 4 tbsp Medjool dates
- 3 tbsp Desiccated coconut
- 2 tbsp Honey
- 2 tsp Cinnamon
- 4 tbsp Pecan nuts (toasted and coarsely chopped)
- 20 g Strawberries
- 20 g Blueberries
Instructions
- Preheat the oven to 190°C.
- Next, warm 2 tbsp. of coconut oil in a medium saucepan over medium heat. Add the quinoa and stir well to coat the grains. After 3 minutes, add hot water and salt and raise the heat to high and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
- Heat the remaining 2 tbsp. of coconut oil in a 23cm cast-iron skillet (or non-stick pan). Add the bananas and cook over medium heat for 2 to 3 minutes, turn the bananas to brown on both sides. Transfer the bananas to a plate and reserve.
- After the quinoa has cooked for 10 minutes, add the dates, coconut, half the sautéed bananas, 1 tbsp. of the honey, and 1 tsp. of cinnamon. Stir well and remove the pan from the heat. Pour the quinoa mixture into the reserved skillet and spread evenly.
- Combine the pecan nuts, 1 tsp. of cinnamon and 2 tbsp. of honey in a small bowl and mix together. Scatter the mixture over the quinoa and spread evenly to cover. Arrange the remaining cooked bananas atop the nut mixture. Bake, uncovered, for 20 minutes, until the top is golden brown.
- Serve warm with natural yoghurt.
