I made these Puddle Bars on my IGTV and they turned out to be a very tasty mistake! Sometimes cooking doesn’t always go to plan but that’s the beauty of it.

Expert Tips
Leaving a few big chunks of dark chocolate in the mix leaves a nice big puddle of melted chocolate in the middle. Mind the splash when you take a bite.
Equipment
- Small mixing bowl
- Large mixing bowl
- Baking tray
- Oven
Ingredients
- 3 Eggs
- 100 g Oats
- 1 Sweet potato (approx. 300g, steamed)
- 150 g Dark chocolate
- 2 tbsp Honey
- 3 tbsp Desiccated coconut
- 3 tbsp Peanut butter
- 2 scoops Whey protein powder (vanilla or chocolate)

Instructions
- Preheat oven to 180℃.
- Cook sweet potato.
- Mash sweet potato in a small bowl using the back of a fork.
- Whisk the eggs and mix in with the sweet potato.
- Mix in the peanut butter and honey.
- Mix the oats, whey and coconut together in a large bowl.
- Add in the egg mixture and stir well.
- Melt 100g of chocolate and add to the mix.
- Chop up the remaining chocolate and add in along with the nuts.
- Pour the batter into a lined tray and bake in a preheated oven for 12-15 minutes until cooked through.
- Allow to cool before cutting into bars.
