Prawn and Mozzarella Tagliatelle

Equipment
- Non-stick pan
- Medium sized pot
- Colander
- Lemon juicer
Ingredients
- 2 tbsp Rapeseed oil
- 400 g Prawns
- 1 tsp Garlic powder
- ½ tap Chilli flakes
- 500g g Fresh egg Tagliatelle
- 16 Cherry tomatoes (halved)
- 15 leaves Basil
- 3 tbsp Lemon juice
- ½ tsp Chillies
- ½ tsp Sweet paprika
- ½ tsp Salt
- ½ tsp Black pepper
- 40 g Pine Nuts
- 150 g Mozzarella cheese (chopped)

Instructions
- Heat a tablespoon of oil on the pan. Add the prawns, garlic powder and chilli flakes.
- Fry on a medium heat for 5-8 minutes. Once cooked, remove them from the pan and set aside to cool.
- While cooking, chop the tomatoes and add to a small bowl with the basil leaves, 1 tbsp oil, the lemon juice, paprika, salt and pepper. Mix well and leave to sit.
- Place the pine nuts in a small pot and toast over medium heat for 3-4 minutes, stirring often to cook more evenly.
- Bring a pot of water to a boil.
- Add the pasta, and reduce the water to a simmer. Cook for 4 minutes (or as per packet instructions).
- Once cooked, drain the Tagliatelle and add it to a large bowl. Gently stir in the prawns, tomato mix, mozzarella cheese and pine nuts. Mix well to fully combine and coat the linguine in the dressing before serving.
