- 6 Cherry Tomatoes (diced)
- 30 g Cucumber (diced)
- 40 g Feta
- 1 tsp Olive Oil
- 1 tsp Balsamic Vinegar
- 1/2 tsp Salt
- 1/2 tsp Pepper

- Toast 2 slices of wholegrain bread.
- Spread the hummus evenly over both slices.
- Add the diced cucumber & tomato on top.
- Crumble the feta over the vegetables.
