- 130g Potatoes
- 2 Eggs
- 2 Slices Of Bread
- 25ml Low Fat Milk
- Pinch Sea Salt
- 1 tsp Smoked Paprika
- 7g Butter
- 1 Handful Spanich

- Cut the potatoes into little chunks and pop them into a small bowl.2. Add 3-4 sprays of fry light and add seasoning of your choice. (smoked paprika used here).3. Put them in the in the Oven / Air-fryer for 15-20 minutes at 200 degrees (depending on how thick the potatoes are cut).4. Crack two eggs into the bowl, add the milk and give it a good whisk until the eggs and milk are combined.5. Add the eggs to the non stick pan along with a handful of spanich and scramble the eggs until cooked to your preferred consistency.6. Toast the bread. 7. Serve up with the scrambled up & spanich on the toast with the potato chunks on the side.8. Enjoy!
