Ingredients

  • 4 Eggs
  • 2 large Potatoes approx. 400g, boiled
  • 4 Pickles chopped
  • 4 tbsp Pickle juice
  • 1 Onion chopped
  • 1 tsp Wholegrain mustard
  • 1 tsp White wine vinegar
  • 4 tbsp Greek yoghurt
  • ¼ tsp Salt
  • ¼ tsp Pepper
  • ½ tsp Dill

Instructions

  • Place the eggs in a pot of cold water. Bring the water to the boil.
  • Once boiling, start your timer. Cook the eggs for 8-10 minutes.
  • Remove from the water and place in a bowl of cold water.
  • Leave them to cool before peeling off the shells.
  • In a large bowl, roughly chop up the potatoes and eggs.
  • Add in the remaining ingredients and mix well until fully combined before serving.
