1 tbsp Olive oil 500 g Trout 6 Potatoes (medium sized) Lemon Curry Sauce 1 clove Garlic (minced) 2 tbsp Olive oil 2 tbsp Lemon juice 1 tbsp Honey 1 tsp Curry powder 1 tbsp Balsamic vinegar 1 tbsp Mustard 1 tsp Garam masala 1 pinch Salt
Steam the potatoes for 10-15 minutes (depending on size) until tender.
Preheat the oven to 180℃.
To prepare the sauce simply mix all the ingredients together to form a paste.
Place the whole piece of trout on a lined baking tray.
Pour the sauce over the trout to fully coat it.
Place the tomatoes beside the trout and add a pinch of salt and tablespoon of olive oil.
Place the tray in the oven and cook for 20 minutes at 180℃.
Remove the trout from the oven and serve with the potatoes.
