Equipment

Ingredients

  • 1 tbsp Olive oil
  • 500 g Trout
  • 6 Potatoes (medium sized)

Lemon Curry Sauce

  • 1 clove Garlic (minced)
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Honey
  • 1 tsp Curry powder
  • 1 tbsp Balsamic vinegar
  • 1 tbsp Mustard
  • 1 tsp Garam masala
  • 1 pinch Salt

Instructions

  • Steam the potatoes for 10-15 minutes (depending on size) until tender.
  • Preheat the oven to 180℃.
  • To prepare the sauce simply mix all the ingredients together to form a paste.
  • Place the whole piece of trout on a lined baking tray.
  • Pour the sauce over the trout to fully coat it.
  • Place the tomatoes beside the trout and add a pinch of salt and tablespoon of olive oil.
  • Place the tray in the oven and cook for 20 minutes at 180℃.
  • Remove the trout from the oven and serve with the potatoes.
